Rare Norwegian Cheese

me and the wife had a bad Valentine’s dining experience. I will let the chef’s response to my complaint speak for itself. if you wish to leave your 2 cents, try this.

Mr. Taylor,

Your opinion of the St. Valentine’s Day degustation is unfortunate. I regret that you did not appreciate the cuisine. However, of the seventeen couples that joined us for the degustation nine of them have emailed sending us accolades for the entire experience with emphasis on the cuisine. Some of our patrons expressing that the evening was the most memorable culinary experience in which they have participated. These individuals being both well traveled and distinguished epicureans. A French degustation is very contradistinct to traditional southern dining. A degustation in its original and traditional function is a tasting of a variety of cuisine meant to be celebrated among close associates. It is not unusual for an inexperienced palate to often be dissatisfied with more cultivated and foreign predilection. As a chef, I REFUSE to compromise the integrity of a European dish to appease the common American palate.

In reference to your bill, each guest was charged for the full degustation. We, based upon full occupancy of our establishment, prepared for each meal in its entirety ordering our product accordingly. For example, one of the courses of the evening was a half ounce of a rare Norwegian cheese. This cheese cost approximately four hundred and fifty dollars per pound, for us to accommodate each patron this cheese had to be purchased in advance. Our menu is predetermined, and priced thusly.

As a gesture of good will, we will extend to you a gift certificate for one hundred dollars to use on your next visit to Pavoni’s. Please respond with your physical address so that we may mail this to you. Good evening.

Sincerely,

Chef Pavoni-Burnham
